Hi, I picked up and love the MB522SP-B (Dual 2.5” SSD Dock Trayless Hot-Swap SATA / SAS Mobile Rack for Ext 3.5” Bay), however I haven't been able to find the proper cabling for it (or I'm just blind on the product page?). It clearly needs some sort of 2x SATA/Oculink to SATA connector, but I can't seem to find that available. As a consequence I am only able to use the bottom bay with a SATA-to-USB connector (I use the dock externally). Does anybody know where I can pick up the proper cable to use both drives simultaneously?
 
First of all, MB522SP-B only takes SATA drive, thus we do not need the Oculink cable in place( that is for NVMe SSDs). Also, MB522SP-B is not designed to be used externally but rather installed in a computer device 5.25" bay.

With the SATA to USB external cable you mentioned, you can get away with the connection for one of the port ( power + SATA port )in the rear of the unit but the other one which only has 1 SATA port without power port, you cannot use the same cable since there is no external SATA to USB cable that comes with SATA header only, usually they come with SATA + power header and convert to USB.

For external use, I do not have any recommendation.

But for internal use, you would simple get 2 SATA cable and 1 power cable ( from your computer power supply) and connect one end of the SATA cable to the motherboard's SATA port and the other end to the rear of the MB522SP-B. It is pretty straightforward.
